Sausage, Rice and Beans Recipe
Ingredients:
- 1 tbsp butter
- Olive oil
- 3 cloves minced garlic (I use pre-minced and use 2-3 tsp)
- Polska Kielbasa (diced)
- 1 cup jasmine rice
- 1 ½ cup water
- ½ onion
- 1 can pinto beans, rinsed and drained
- ½-1 tsp Italian seasoning
- ¼- ½ tsp Red pepper flakes
- Salt + Pepper to taste
Make it:
Heat a large pot over medium heat with olive oil and butter until the butter is melted
Add the kielbasa and onion; sauté until onions become soft and translucent. Cook until meat is slightly seared. Add garlic and cook until fragrant (30 seconds)
Stir in rice, water, Italian seasoning, red pepper flakes, and a dash of salt and pepper. Bring to a boil. Cover. Reduce heat to low/medium-low, simmer for 18 minutes or until rice is done. Stir once toward the end to prevent sticking.
Remove from heat and stir in pinto beans.
Serve immediately.
